some pics would be great if you have any, do you want to make it a dedicated bream luring boat? if you do insted of taking the seat out why don you make a large forward casting deck that goes over the first two seats.
heres the setup of a boat that i found on the net i think that it has three seats in it also

Any modification is possible, the question is will the cost out weigh the benefits?.
If you remove the middle thwart (assumed) seat you may be weakening the structure. this can be compensated by extra ribs, wide deck gunwhales or by putting in an other structure. Your'e original question really is too broad. If you want appropriatte advise we need things like size, type, brand, intended use all sorts of stuff. Photoes would be nice. the more you can give us the more you'll get back.

Spot on Angry.
One thing, depending on position, is to redo the middle seat with a new frame brace that could hold your live well. All depends on layout and size of the boat.

gaday buddy
here's a couple pics of my second boat THE TITANIC. its still not finished have pro seat for front cast platform, 65lb bow mount on the way and a hatch for middle of front platform. you'll notice the front deck, it has the front seat still under it, i used fibreglass sheet from the seat to the anchor store area, aprox 1300mmx 1200mm. the floor between the seats i used 2.5mm ally glued and riveted to the ribs, i blocked off the gap under the seats with left over ally plate from floor. good 1 person boat but will fish 2 at a pinch. i have a 15 mariner, for place that allow OB's and i have 2 electrics but there both tillers 1 moto/g T35, the other minokota 36. will be ditching Moto/G soon as the bow mount arrives
