A jack plate has nothing do do with motor selection really. You can put any motor on a jack plate.
Jack plates are all about the hull/motor combination characteristics and how moving the motor further and/or higher away from the transom can improve the way the hull performs.
What hull are you thinking of?

When getting my boat .I made some enquiries about a jack plate and was told to expect about a 5 mph increase in speed.
I didn't bother and in 3 years only once wished I could go a little faster.
For the cost, I wouldnt bother, unless you get some fantastic changes in performance.
Ask the dealer you are buying the boat from they should be the best or maybe ask the guys at skeeter aus , they would know quite a bit about them.

Skeet,
I run a 135 Opti on a CMC jacking plate. The plate has allowed me to easily play with engine height adjustment and get the boat running just right.
