If you are specifically targeting them i suggest upping your leader to 10-12lb fluro to prevent them grinding through it. Im guessing you will be using soft plastics?
Seeing as they are bottom dwellers i like to use a heavy jig head like a 1/4 or 1/8 as they get to the bottom fast. The technique is to just continually jig it up then let it hit the bottom.
Here are some good links ive found and they show the plastic techniqu and where to find em. Hope that helps

Yeh what Crayfish said mate,
They are a bottom fish so you have to fish the bottom, big plastics like 5" gulps or big Squigy shads work a treat 1/8-1/6 jig heads.
Basically just try and cover a wide area eg long cast and a simple double hop then let sit on the bottom for a few seconds then hop again to get the puff of sand to attract them.
hope this helps
cheers
